No-Bake Fish-Cracker Cake in a Hurry
A very moist, delicious cake from just five ingredients! This no-bake fish-cracker cake is a pleasure to make. You can add any fruit or berries you like. A quick, simple dessert in a matter of minutes!
Cooking method
-
Step 1:
How do you make a no-bake Fish cake? Start by gathering the ingredients for the base. As you can see, there are only three. I recommend using whole condensed milk, 8.5% fat. The yogurt should be plain, unsweetened, with no additives, since the condensed milk has plenty of sugar already. You can replace the fish crackers with any other cracker you like.
-
Step 2:
In a separate bowl, mix the yogurt with the condensed milk.
-
Step 3:
Add the crackers to the resulting cream and mix. Note that I don't crush them.
-
Step 4:
Leave the crackers in the cream at room temperature for 1 hour. During that time they'll soak through nicely.
-
Step 5:
Divide the soaked cracker mixture in half, put it into two identical molds, and smooth it out. Put both molds in the fridge or freezer for another hour.
-
Step 6:
Gather the ingredients for the cream. You can replace the farmer's cheese with a soft cream cheese. Choose high-fat, natural butter, and it should be soft.
-
Step 7:
Combine the soft butter with the condensed milk and mix until smooth.
-
Step 8:
Add the farmer's cheese and mix well again. You don't have to beat it - just stir with a spoon, fork, or spatula.
-
Step 9:
Gather the ingredients for the filling. You can actually skip it entirely - the cake will be delicious without it. But for moisture, I still recommend adding it. I'm using strawberries, which you can replace with any other fragrant berries or fruit, fresh or frozen.
-
Step 10:
Wash the strawberries, dry them, and remove the stems. Cut the berries into medium pieces.
-
Step 11:
Start assembling the cake. Assemble it inside a ring mold: the first layer is one of the two cracker bases that set in the fridge.
-
Step 12:
On top of the cracker layer, arrange one of the two portions of strawberries in a single layer.
-
Step 13:
Spread half the farmer's cheese cream over the strawberries and smooth the surface.
-
Step 14:
Arrange the remaining strawberries over the cream in a single layer.
-
Step 15:
Put the second set cracker base on top of the strawberries.
-
Step 16:
Coat the top and sides of the cake with the remaining farmer's cheese cream and smooth its whole surface. Instead of a special cake smoother, you can do this with a wide, flat spatula or a knife.
-
Step 17:
Coat the top and sides with cookie crumbs and put the cake in the fridge for 2 hours. Before serving, decorate the no-bake Fish cake with strawberries and mint.
