- Soy-honey sauce is a go-to for roasting any kind of meat, chicken included, and it's a staple across Asian cooking. If you're using frozen chicken, thaw it at room temperature first. Wash the drumsticks and pat them well dry. Make the sauce: squeeze the juice from a lemon — half a small one is plenty. If your honey is thick, warm it in a water bath until it's pourable. Combine the soy sauce, liquid honey, and lemon juice and stir well until the honey dissolves. Salt it lightly if you like, though soy sauce is salty on its own and seasons the chicken well, so you can leave the salt out if you're watching your intake. Stir the paprika, ginger, and black pepper (if using) into the marinade until evenly blended. Put the drumsticks in a suitable container, pour the sauce over them, and toss well to coat. Cover and refrigerate to marinate for 2–5 hours, or ideally overnight — the longer they marinate, the tastier and more fragrant the result. Toss them a couple of times so they soak up the sauce evenly. Transfer the marinated drumsticks, along with the sauce, to a baking dish (nonstick, ceramic, or glass all work). Bake in an oven preheated to 350°F (180°C) for 40–50 minutes, until golden. Serve the soy-honey drumsticks hot with any side or fresh vegetables. Enjoy! You can cook any cut of chicken this same way.
