    In the resulting mass, we begin to introduce bulk ingredients sifted through a sieve: corn starch, flour and baking powder. Carefully knead all the ingredients, the dough should be quite dense.

    Take the proteins out of the refrigerator, add a pinch of salt and start whipping them into a strong white foam, adding the rest of the granulated sugar in the process of whipping.

    We carefully begin to introduce the protein mass into the dough, well, but at the same time we mix it carefully. The finished dough is set aside for 15 minutes.

    At this time, it is necessary to prepare a baking dish for cakes. We put baking paper in a latka or baking sheet. I recommend greasing the paper with vegetable oil.     We remove the cooled baumkuhen pie from the rolling pin, cut it into two parts and install it so that the slice is visible. We lubricate the sides with melted chocolate, imitating the bark of a tree. We remove the Baumkuchen for 1 hour in the refrigerator to freeze the glaze.

The number of years of your "tree pie" depends on the shape in which the cakes will be baked and on their thickness. The thinner the cakes are, the more "rings" indicating the age of the tree you will get.
For a great flavor, I advise you to add 50 ml of rum to the dough. Then the pie will sparkle with new flavors. Also for taste and beauty, the sides of the baumkuchen are sometimes decorated with chopped nuts. A more expensive version of this pie involves replacing wheat flour with almond flour.
