According to this recipe, you can cook any fish: pollock, cod, nototenia, as well as red fish. If we take a whole fish, then it must be thoroughly washed, freed from the skin, fins and bones. If the fillet is ready, then it is also well washed and dried. Cut the fillet into portions of the desired size.
Now you need to season the fillet so that it turns out delicious and fragrant.
Fish perfectly absorbs any odors, so the most successful seasoning for it is herbs. The range of herbs for baking fish is quite wide. Mixtures of herbs are excellent: Italian, Provencal. They are well revealed in fish dishes, while not obscuring the taste of the main product. Marjoram, thyme, tarragon, parsley, dill, rosemary will be appropriate. I used purple basil, tarragon and oregano. This combination is not the first time I use it, it turns out a wonderful flavor bouquet. Adding spices is a matter of taste. But it is necessary to take into account the main rule: spices and herbs can emphasize the taste of the dish, but they can also spoil it if they are used thoughtlessly and without measure.
So, sprinkle the fillet with the juice of half a lemon. Salt to taste. Add seasonings and spices. Stir the fillet and let it marinate for about 30 minutes. During this time, the fish will be soaked in lemon juice and the fragrant herbs will open up a little.
Peel the onion, wash it, cut it into half rings.
It is advisable to use a baking dish with high sides. Lubricate it with olive oil. We put onions on the bottom. Spread the prepared fillet evenly on top.
Put the mold in a preheated oven to 190-200 degrees for 25 minutes.
Meanwhile, we combine sour cream with flour, basil and oregano. Stir until the lumps disappear.
Take out the fish, evenly cover with sour cream mixture and put it back in the oven for 15 minutes until browning.
Dill greens are washed, dried, finely chopped. When serving, sprinkle the fish with fresh herbs.
We serve the dish hot with any side dish of cereals or potatoes. Baked fish is perfectly combined with stewed or fresh vegetables.
