Step-by-step cooking

Cooking time: 1 h 10 min
  1. Step 1:

    Step 1.

How to make blueberry cupcake? Prepare the ingredients. The dough for the cupcake will turn out more lush if all the products are the same, at room temperature. Therefore, remove the eggs, butter and milk from the refrigerator in advance. Take high-quality, natural butter, without milk fat substitutes. Frozen berries are also suitable for a cupcake, pre-defrost them and drain the excess juice.

  2. Step 2:

    Step 2.

Sift flour with soda. Do not skip this step — sifting will saturate the flour with oxygen, which will make the baking more lush. Add sugar and vanilla to the flour. Mix it up.

  3. Step 3:

    Step 3.

Beat the eggs into a deep bowl. Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush. Beat the eggs with a mixer into a fluffy foam.

  4. Step 4:

    Step 4.

Add milk and soft butter at room temperature to them. Mix with a mixer until smooth. If you have not had time to soften the butter, then you can melt it, cool it and pour it together with the milk.

  5. Step 5:

    Step 5.

Pour the dry ingredients into the egg mixture.

  6. Step 6:

    Step 6.

Mix gently, achieving a homogeneous dough without lumps.

  7. Step 7:

    Step 7.

Wash and dry the blueberries. Carefully insert the berries into the dough.

  8. Step 8:

    Step 8.

Put the dough in a greased cake pan, smooth the top. Any heat-resistant form is suitable for this recipe. If you use a silicone mold, then you do not need to smear it with oil. But it is better to lightly lubricate metal, ceramic or glass dishes with vegetable oil so that the baking does not burn. Bake the cake for about 40 minutes at 180 ° C. Check readiness with a wooden skewer. Remove the finished cupcake from the oven and cool.

  9. Step 9:

    Step 9.

Prepare the glaze. You can serve a cupcake without it, but the sourness of the juice will perfectly emphasize the taste of blueberries.

  10. Step 10:

    Step 10.

How to make icing? Mix powdered sugar with lemon juice until smooth. Adjust the consistency with the amount of powder — the glaze should become thick, but at the same time remain fluid. Pour the icing over the cupcake, decorate the top with berries and mint. Serve to the table. Bon appetit!

When the top layer of baking is slightly browned, check it for readiness: pierce it with a wooden skewer in several places, if the skewer comes out dry, then the mold (or baking sheet) can be taken out of the oven.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
