When preparing shanks, the main thing to pay attention to is the choice of cottage cheese. It should not be too soft, like a curd mass. In order for the shanks to be perfect, the cottage cheese should be fine-grained - enough to feel the taste and structure of the cottage cheese.

Remove the butter from the refrigerator in advance - it will need a soft room temperature.

Turn on the oven to warm up to a temperature of 180 degrees.

Sift flour into a deep container. Add baking powder (or soda) and a little salt. Mix all the dry ingredients thoroughly with a spoon.

Put the cottage cheese in a container with flour. Grind it together with flour until smooth.

Add the softened butter to the container with flour and cottage cheese and mix thoroughly.

Knead a soft elastic dough. Wrap it in plastic wrap and put it in the refrigerator for an hour.

After the dough has rested in the refrigerator, knead it and roll it into a small roll. Cut the resulting roll into small circles. Roll out each circle with a rolling pin into a round cake.

Pour sugar into a container. Dip the rolled flatbread in sugar with one side, then roll the flatbread in half with the sugar side inside and dip it in sugar again. Wrap the tortilla inside with the sugar side again and dip it in sugar again. Thus, fold each tortilla in half, then in a quarter and roll each top layer in sugar. Do this with all the rolled circles.

Cover the baking sheet with parchment and put all the sugar-coated shanks with the sugar side up. Put the baking sheet in the preheated oven for 20-25 minutes, until the shanks are covered with an appetizing golden crust.

Ready-made rosy shanks are best served with hot milk, cocoa or tea.
