Step-by-step cooking
Step 1:
Cut ham and cheese into small cubes. Leave some cheese and grate - we will sprinkle them on muffins. Wash and chop the green onions.
Step 2:
Put eggs and milk out of the refrigerator on the kitchen table in advance so that they get a little hot. In a deep bowl, beat the eggs, add salt, sugar and black pepper, beat everything with a whisk or mixer.
Step 3:
Pour milk and melted butter into a cup with beaten eggs. Stir with a whisk.
Step 4:
Sift flour and mix with baking powder. Instead of baking powder, you can take soda and extinguish it with vinegar or citric acid. Pour the flour mass into a bowl with a liquid mass. Mix lightly and very gently with a spoon. It is not necessary to bring it to uniformity, as long as the flour is well mixed and that's it.
Step 5:
Pour the prepared products into the bowl with the dough: chopped ham, cheese and green onions.
Step 6:
And mix again lightly (!) with a spoon. Our dough is ready.
Step 7:
Preheat the cupcake molds in the oven. I always do this so that the dough doesn't stick. Lubricate them with butter and sprinkle with breadcrumbs or flour. From the amount of dough I received, I got 11 muffins, and there are only 12 cells - one remained empty. We put a tablespoon of dough into the molds.
Step 8:
We send the muffins to the oven, preheated to 180 degrees. Bake them for 30 minutes. 5 minutes before cooking, remove them from the oven and sprinkle with grated cheese. We put it back to be baked. Ready-made muffins are very well removed from the molds. Take them out immediately and serve them hot.
