Although we will cook these buns from a quick yeast dough, we will make it on a quick sourdough. To do this, heat the milk to 30 degrees in a microwave oven, pour it into a bowl. Add a tablespoon of sugar, dry yeast and a couple of tablespoons of wheat flour to the milk.
Step 3:
Stir the mixture thoroughly so that the yeast dissolves. Put the bowl in a warm place for 15 minutes.
Step 4:
Meanwhile, melt the butter, you can also use a microwave oven. Let it cool down a little. Pour vegetable oil into a bowl with sourdough, put 30 g of butter, 4 tablespoons of sugar, a pinch of salt, add one whole egg and the protein from the second. We need the yolk of the second egg to lubricate the buns. The resulting mass is stirred well.
Step 5:
Start pouring in the sifted flour. It is not necessary to pour out all the flour at once, it is better to do it with a tablespoon so that the dough is well mixed. Knead the dough.
Step 6:
It should be elastic and not sticky to the hands. We give him half an hour to rest in a bowl under a towel.
Step 7:
Add flour to the table before working with the dough. Divide the dough into two equal parts.
Step 8:
We divide each of these parts into 4 pieces.
Step 9:
We form kolobki from the pieces.
Step 10:
We stretch each bun into an oblong tortilla with our hands.
Step 11:
Then this cake is carefully rolled out with a rolling pin so that the dough is of the same thickness no more than 0.5 cm .
Step 12:
Lubricate each tortilla with melted butter.
Step 13:
Sprinkle ground cinnamon and sugar on top.

Gently twist into a roll.

We fasten the ends of the roll.

With a knife (it's better to do it with kitchen scissors, because the knife will stretch the dough) we make an incision of the rolled roll from the fold side, but not reaching the end by about 1.5 cm. Turn out the roll from the side of the incision to get a heart with layers.
Step 17:
We spread the hearts-buns on a greased baking sheet. We put it in a warm place for half an hour.
Step 18:
The buns will rise significantly during this time. Lubricate them with beaten egg yolk and sprinkle sugar on top. Preheat the oven to 200 degrees. Bake the buns at this temperature for about 20 minutes.
Step 19:
Serve warm or cold (they are even cold soft inside and crispy outside and very tasty) with tea, coffee, cocoa or milk. Have a nice tea party!
