Step 1:
We take all the necessary products and look at the recipe how to cook pumpkin and vegetable stew.

Peel the pumpkin and cut it into small cubes (if the pumpkin is not too young and not watery, cut it very finely so that it cooks faster).
Step 3:
Onions are cut into thin rings, then we throw it into a frying pan with melted butter and stew (it is stewed, not fried) until the onion becomes transparent. At the end, add the squeezed garlic. Cut sweet bell pepper into half rings and add it to the onion.
Step 4:
Immediately put the raw pumpkin here. Turn down the heat, mix and simmer for literally three minutes.
Step 5:
After we remove from the fire, take a rectangular baking sheet, coat it with butter, salt and spread the vegetable mixture with garlic, bake in the oven for about twenty minutes. The oven should be warmed up to one hundred and eighty degrees.
Step 6:
This pumpkin stew can be an ideal side dish for fried meat: pork, beef, veal, poultry. Such food also goes well with boiled rice (personally tested).

The dish belongs to the category of budget - this means that you will not spend much on purchasing all the necessary products. Maybe you already have them at hand, then you won't have to go to the store at all. I really like to cook and eat this pumpkin stew, as does my whole family, who are supporters and adherents of a healthy diet. We often cook it in the country, where all the necessary vegetables grow in my garden. You can cook this dish all year round, because pumpkin, pepper, onion and garlic can always be bought in the store, unless you have your own stocks. I buy only pepper, everything else is available in abundance.
