Step 1:

Take the flour of the highest grade. Butter and eggs should be at room temperature, so take them out of the refrigerator in advance. You can use any jam to your taste. I have cherry.
Step 2:
Combine soft butter with honey and lemon zest. Beat with a mixer until fluffy. You can knead the dough not with a mixer, but with a whisk by hand.
Step 3:
Continuing to beat, add the chicken eggs one by one.
Step 4:
Pour in the vegetable oil and whisk again.
Step 5:
Sift flour with cocoa and baking powder and pour parts into the dough. Flour may need more or less, so focus primarily on the consistency.
Step 6:
You should get a lush, very tender, but thick enough non-flowing dough.
Step 7:
Transfer the dough to a baking sheet covered with parchment and greased with oil (25x30 cm) and smooth it out. I didn't have a baking sheet of this size, I had to use a 21x31 cm form. Therefore, the cakes turned out to be quite high.
Step 8:
Bake the cake for about 30-40 minutes at 160 ° C until a dry match. Cool the finished cake and carefully remove it from the mold. The cake turns out to be tender, airy and easily breaks. Cut lengthwise into two equal parts. If necessary, trim the edges with a knife.
Step 9:
Brush one half thoroughly with berry jam. Cover with a second cake. The consistency of the jam should be thick enough. Jam can be replaced with soft marmalade or thick jam. The dough is very porous and will quickly absorb less dense jam-type fillings.
Step 10:
Cut the cakes into portion cakes. Garnish with mint. Bon appetit!
