Rye flour dough buns with onions

Light, airy, very fragrant and delicious! Buns made of rye flour dough with onions are my next experiment - there was rye flour in the cupboard and I had to find a use for it! But rye flour itself is heavy (remember black bread), what kind of buns are there... The best dough from rye flour is obtained with the addition of ordinary wheat flour (in this recipe 1:1). I must say that they made me very, very happy and I will definitely cook from more and more!

Step-by-step cooking

Cooking time: 2 h 30 min
  1. Step 1:

    Step 1.

Prepare the necessary ingredients, all the flour must be sifted to saturate it with oxygen

  2. Step 2:

    Step 2.

Mix dry yeast, sugar and 2 tablespoons of flour

  3. Step 3:

    Step 3.

Add half a cup of water in small portions (so that there are no lumps) and mix until the yeast dissolves

  4. Step 4:

    Step 4.

Cover with a towel and leave in a warm place for 20 minutes

  5. Step 5:

    Step 5.

Meanwhile, peel the onion and finely chop

  6. Step 6:

    Step 6.

Fry in a preheated frying pan with the addition of vegetable oil until golden brown

  7. Step 7:

    Step 7.

    Mix wheat flour with salt

  8. Step 8:

    Step 8.

Pour the remaining water into the approaching sourdough, add vegetable oil, fried onions and both types of flour, knead the dough, knead well. This dough is quite sticky, so if you have a dough mixer or bread maker, be sure to use their services - this will greatly simplify the kneading process

  9. Step 9:

    Step 9.

Cover the dough with a towel and leave it in a warm place for 1 hour

  10. Step 10:

    Step 10.

After an hour, the dough oh-oh-rose very well - I didn't even expect this from him! We grind it and form buns

From these ingredients I got 13 buns. Spread them on a baking sheet covered with baking paper and greased with a small amount of vegetable oil

  12. Step 12:

    Step 12.

We separate the yolk from the protein and lubricate the buns with it so that they acquire a beautiful golden color when baking

  13. Step 13:

    Step 13.

    Sprinkle sesame seeds on top

  14. Step 14:

    Step 14.

We put the buns in the oven at a minimum temperature, if the oven is gas, like mine, we leave the door ajar, because after all, it does not allow us to reach a temperature of 50-60 degrees, as in electric. We leave the buns for proofing for 15-20 minutes

  15. Step 15:

    Step 15.

Then close and bake them at 180 degrees for 25-30 minutes

  16. Step 16:

    Step 16.

Take our fragrant golden buns out of the oven and leave to cool

  17. Step 17:

    Step 17.

The aroma of the buns is simply amazing - most likely your household has already tightened up)

  18. Step 18:

    Step 18.

And this is a cross-section photo - you can see how airy and porous they are! Bon appetit!
