Step 1:
Prepare the ingredients. Kefir and chicken eggs should be removed from the refrigerator in advance, we need them at room temperature.
Step 2:
We drive chicken eggs into a bowl. If the chicken eggs are large, then two pieces are enough, otherwise you need to increase their number to three for such a number of other ingredients.
Step 3:
Add sugar and salt and beat well with a whisk so that the eggs disperse, foam appears on the surface. To speed up the process, you can use a mixer.
Step 4:
Add kefir and vegetable oil to the egg mixture. Mix it up.
Step 5:
Pour in the sifted flour, combined with soda. Flour must be sifted and added to the dough in parts so that the density of the dough can be adjusted. Since the density of flour differs from different manufacturers, the amount of flour required for the cake may vary. Soda can be added to the dough on kefir instead of baking powder, it has entered into an alkaline reaction with kefir, and the dough will be lush.
Step 6:
However, you need to be careful with soda, its excess can give the dough bitterness. Bubbles should appear on the surface of the dough. Mix the dough well so that there are no lumps left. The dough should have the consistency of thick sour cream. The cake baking dish is lubricated with vegetable oil. Immediately pour the dough into the mold.
Step 7:
No need to leave the dough to stand, so you need to preheat the oven in advance while you prepare the dough for the cupcake. Preheat the oven to 180 degrees. Bake the cupcake for about 25 minutes.
Step 8:
When it turns red, check its readiness with a wooden toothpick. If it comes out of the dough dry, then the cupcake is baked, we take it out of the oven and out of the mold. Sprinkle with powdered sugar on top or lubricate with jam if desired. We serve it to the table. Have a nice tea party!
