Grind the cottage cheese with 1 tablespoon of sugar, add the egg. Then softened butter and rub the mass until smooth.

Mix soda and salt into the flour, then add it in parts to the first mass.
Step 4:
Knead the dough. It will stick slightly to your hands. We put it in cellophane and send it to the refrigerator for 1 hour.
Step 5:
1 option. Roll out the dough with a thickness of about 0.5 cm. We cut out circles with a glass.
Step 6:
Pour sugar into a bowl. Dip the dough circles in sugar.
Step 7:
With the sugar side, fold the circle of dough in half, pressing down with your fingers.
Step 8:
Fold the semicircle of dough in half again, sugar inside. And dip one side in sugar, spread on a baking sheet with the sugar side up.
Step 9:
2 option. Roll out the dough into a layer as thin as possible, divide into 3 or 4 parts. We put them on top of each other, sprinkling with sugar.
Step 10:
Roll out the resulting layers into 1 layer, sprinkle with sugar.
Step 11:
Visually divide the dough in half and fold the edges of the dough to the middle 2 times. We combine them into a roll.

Cut the roll 1 cm thick.
Step 13:
The baking sheet is lined with parchment paper and lubricated with oil. We spread the cookies. Bake at 180 degrees for 20 minutes. Cookies should turn brown.
