Step 1:
To prepare a chocolate charlotte with pears, you will need: eggs, sugar, salt, cocoa, flour, cinnamon, pears, vegetable oil to lubricate the mold.
Step 2:
Mix flour with cocoa, sift well.
Step 3:
Combine eggs with sugar.
Step 4:
Beat at medium speed of the mixer until a dense light mass is obtained and the volume increases 3-4 times. In the process of whipping, add salt.
Step 5:
Pour the flour and cocoa into the egg mass in parts. Mix with a spatula with movements from top to bottom, saturating the dough with air. You need to do this very carefully, not too quickly, but not for long, so that the dough does not lose its airiness.
Step 6:
You should get a lush, homogeneous dough without lumps of flour.
Step 7:
Wash the pears, dry them, cut them into not very thin slices.
Step 8:
Cover the form with parchment if necessary, lubricate with oil. Lay out the slices of pears.
Step 9:
Pour the dough on the fruit layer, gently smooth it out.
Step 10:
Bake the charlotte in a preheated 180 degree oven for 35 minutes. Do not open the oven during baking so that the cake does not settle. Let the finished pastries stand in the oven off for another 10 minutes, then remove. Cool the charlotte, turn it over on a platter so that the pears are on top and serve to the table.
