Step 1:
Prepare the ingredients. For the base of the cake, we will need a puff pastry without yeast, which must be pre-thawed.
Step 2:
Roll out the puff pastry into a not very thin circle with a diameter slightly larger than the baking dish.
Step 3:
Put in a baking dish lined with parchment, making the sides. The sides can also be made from leftover dough.
Step 4:
Cover the bottom and sides of the dough with parchment and pour out the load. I have these beans. This is necessary so that the dough retains its shape and does not rise when baking.
Step 5:
Bake the cake for 15 minutes at 200 ° C. Then remove the cargo and parchment and bake for another 10 minutes. You can bake all 25 minutes with a load, but you need to make sure that the dough does not burn from the bottom. Remove the finished cake from the mold and cool.
Step 6:
Filling. To prepare the filling, we will need: strawberries, seedless kish-mish grapes, apricots (I have smooth ones), honeysuckle or other blue or blue berries to taste (blueberries, currants). You need to select by color so that 4 different spectra are combined in the pie: green, yellow, red and blue.
Step 7:
Cut the grapes in half. Wash the strawberries, dry them, remove the tails. Large berries cut into quarters, medium – in half, small ones can be left whole. Cut the apricots in half, remove the seeds. Cut each half into 2-3 more pieces. Sort the honeysuckle, wash and dry.
Step 8:
Cream. To prepare the cream, we will need: whipping cream (33-35% fat content), powdered sugar and vanilla sugar.
Step 9:
Beat the cooled cream into a strong stable foam together with powdered sugar and vanilla sugar. When turning the bowl over, the whipped cream should remain in it.
Step 10:
Put the cream on a completely cooled cake and smooth it out.
Step 11:
Use a spatula to make furrows on the cream to divide the pie into 4 equal sectors. Arrange grapes, apricots, strawberries and honeysuckle by sectors. Put the pie in the refrigerator for 1-2 hours.
Step 12:
