Step-by-step cooking
Step 1:
Dough. Defrost the puff-yeast dough.
Step 2:
Roll out the dough into a circle equal in diameter to the diameter of the baking dish, but not very thin.
Step 3:
Cut strips from the remains of the dough to decorate the sides.
Step 4:
Put the dough in a baking dish lined with parchment. On the sides, form bumpers from strips of dough.
Step 5:
Fill. For filling we will need: cream, egg yolks, almonds and sugar.
Step 6:
Pre-pour the almonds with boiling water and leave for 3 minutes. Then peel off the skin. Grind the nuts in a combine or coffee grinder into fine crumbs.
Step 7:
Whisk cream with sugar into a lush dense mass. You can also add 1 tablespoon of vanilla sugar.
Step 8:
Add the yolks to the cream.
Step 9:
Still beat again.
Step 10:
Add ground almonds to the cream.
Step 11:
Gently mix the mass until smooth with a spatula.
Step 12:
Filling. Ripe juicy pears and ground cinnamon will be needed for the filling.
Step 13:
Wash the pears, dry them and cut them into medium slices. Cut out the core with seeds.
Step 14:
Put the slices of pears on the dough. Sprinkle the pears evenly with cinnamon. I forgot to do it, so I sprinkled cinnamon on top of the filling.
Step 15:
Pour the creamy almond mixture on top.
Step 16:
Arrange the slices of pears on top.
Step 17:
Put the pie in a preheated 180 ° C oven and bake for 30-35 minutes.
Step 18:
Remove the pie from the oven, sprinkle with almond petals. Put in the oven for another 7-10 minutes, until the almonds are browned. Cool the finished cake completely and cut into pieces. Bon appetit!
This pie can be made with any berries or fruits.
You can serve the pie with a scoop of vanilla ice cream.
The finished cake can be stored in the freezer.  In chilled form, it turns out no less delicious.
You can serve the pie with tea, coffee, chicory or warm milk.
