Step 1:

To make cakes, mix eggs, honey, kefir and sugar with a mixer. When the sugar is completely dissolved, pour in a bag of baking powder and add the sifted flour in portions. Mix everything at medium speed with a mixer. The result is a thin dough, from which we will prepare three cakes.
Step 3:
Pour the third part of the dough into a baking dish pre-lined with paper, and send it to a preheated 180 degree oven for 20-25 minutes. So we bake all the cakes.
Step 4:
Let the cakes cool down and let's prepare the cream.
Step 5:
To prepare the cream, softened butter is mixed with condensed milk until smooth. Let's leave the butter-milk cream for a while and get busy with citrus fruits. Pour boiling water over the orange and lemon, cut into small pieces and grind with a blender.
Step 6:
Add the citrus puree to the butter cream and mix with a mixer at low speed. The citrus cream is ready, the cakes have cooled down and we form the cake.
Step 7:
Liberally lubricate each cake and the sides of the cake with cream. We send the cake to the refrigerator to soak for 2 hours. We decorate the finished cake as desired (I usually decorate with chocolate) and serve it to the table.

Honey cakes are not only delicious, but also healthy. The dough on kefir turns out to be very soft and tender. Baked cakes can be smeared with sour cream, butter, chocolate and other creams, but in my opinion, fruit citrus cream with a unique sourness is very suitable for this cake.
