Cooking method
First of all, make a sourdough for the future test. To do this, sift wheat flour into a bowl, add dry high-speed yeast to the same place. Separately, warm up the milk to a warm state - the temperature of the milk should be somewhere 33-37 degrees Celsius. Pour warm milk into the flour and yeast mixture and mix well with a tablespoon. Then cover the bowl with sourdough with a clean kitchen towel and leave in the heat for about 40 minutes or a little more. During this time, the yeast should be activated and the sourdough will increase in volume.
Meanwhile, sift the rest of the wheat flour. As soon as the sourdough is ready, add the sifted flour, salt and sugar to the bowl for a balanced taste, as well as the egg yolk. Separately melt a piece of butter and also put it in a bowl. First, mix all the ingredients together with an ordinary tablespoon. And then transfer the mass to the work surface and knead a soft and elastic dough that does not stick to your hands. Sprinkle the resulting dough lightly with flour and put it back in the bowl. Cover again with a towel and put it in the heat so that it rises.
After an hour and a half, when the dough has increased by at least two, put it back on the work surface and divide into small equal pieces. From these pieces to form neat round buns.
Put baking paper on a baking sheet and put the formed buns on it. Cover the buns with a towel and leave in a warm place for about half an hour.
Meanwhile, turn on the oven at 200 degrees Celsius.
Prepare the mixture to cover the buns. To do this, mix the egg with a small amount of milk.
As soon as the buns "fit" again, grease the tops of the buns with a mixture of milk and egg and sprinkle with sesame seeds. Place the baking tray with the buns in the preheated oven for 15-20 minutes, depending on their size. Readiness can be checked with a toothpick.
