Cooking method
The dough for this pie can be prepared in advance by yourself or use the store option. If the dough has been frozen, you need to get it out of the freezer in advance so that it has time to defrost and become room temperature. After rolling it out, we put it in a baking dish so that the sides turn out. If necessary, the edges of the dough are cut off. We prick the dough with a fork ten times along the bottom and put the mold with it in the refrigerator for 15 minutes.
While the dough is in the refrigerator, turn on the oven to warm up to 200 degrees Celsius. Time has passed - we remove the mold from the refrigerator, put a piece of baking paper into it, then fill it with dried peas to the brim. This is necessary so that the base of the dough remains smooth when baking. Put the mold in a hot oven for 15 minutes. When this time has passed, we remove the paper and peas, and bake the dough for another 8-10 minutes. It should turn out ruddy.
Cut the salmon into small pieces, which we transfer to a bowl of suitable size. Pre-washed and dried dill, green onions and herbs are finely chopped, and some of the greens are left to decorate the finished dish. Add the greens to the fish, mix and spread with the base, evenly distribute along the bottom.
In a separate bowl, mix eggs, cream and milk, add grated nutmeg to the mixture (be sure to be fresh, as the aroma quickly wears off) and spices for fish (if desired, it will also be delicious without them), salt. Carefully pour the resulting mixture over the fish.
Put lauren's quiche in the oven for 35 minutes, the filling should freeze. After the pie is removed from the oven, let it stand in the form of 10 minutes.
We serve delicious lauren quiche warm, garnished with fresh herbs left for this purpose, and enjoy!
