Shchi (Cabbage Soup) in Meat Broth

- Wash the pork, put it in a pot, cover with water, set it over the heat, bring to a boil, and cook for 5 minutes.
- Drain off this first broth, cover the meat with clean water, add the bay leaf, peppercorns, and peeled celery root, and cook until the meat is done — about 30 minutes from the boil.
- Then take out the pork, set it on a plate, let it cool, and cut it into serving pieces. Lift out the celery, peppercorns, and bay leaf with a slotted spoon, or simply strain the broth through a sieve.
- Peel the onion and carrot; dice the onion small and grate the carrot. Sauté the vegetables in vegetable oil.
- Peel the potatoes, cut them into small sticks, and add them to the boiling broth. Cook the potatoes for 10 minutes.
- Add the sauerkraut after the potatoes and cook for about 7 minutes, then add the sautéed vegetables and season with salt and pepper to taste. Return the meat to the shchi, let it boil for a couple more minutes, and take it off the heat.
- Serve the shchi garnished with fresh herbs and finished with sour cream.
