Shchi (Cabbage Soup) in Meat Broth

Try fragrant shchi with meat! So tasty! Shchi (Russian cabbage soup) made on meat broth is heartier, with a pleasant tang and a savory aroma. For the broth you can use bone-in pork or beef, or just boneless meat — it won't change the flavor of the finished dish. Serve the shchi with sour cream, which sets off its flavor beautifully.

    1. Wash the pork, put it in a pot, cover with water, set it over the heat, bring to a boil, and cook for 5 minutes.
    1. Drain off this first broth, cover the meat with clean water, add the bay leaf, peppercorns, and peeled celery root, and cook until the meat is done — about 30 minutes from the boil.
    1. Then take out the pork, set it on a plate, let it cool, and cut it into serving pieces. Lift out the celery, peppercorns, and bay leaf with a slotted spoon, or simply strain the broth through a sieve.
    1. Peel the onion and carrot; dice the onion small and grate the carrot. Sauté the vegetables in vegetable oil.
    1. Peel the potatoes, cut them into small sticks, and add them to the boiling broth. Cook the potatoes for 10 minutes.
    1. Add the sauerkraut after the potatoes and cook for about 7 minutes, then add the sautéed vegetables and season with salt and pepper to taste. Return the meat to the shchi, let it boil for a couple more minutes, and take it off the heat.
  • Serve the shchi garnished with fresh herbs and finished with sour cream.
