Cooking method

Put the softened margarine in a bowl, pour kefir, add sour cream and egg yolk, mix with a whisk. In the resulting mass, pour salt and soda, sift the flour (we do not introduce all at once, but in parts), knead the soft dough. The dough should not stick to your hands. We roll it into a ball, cover it with cling film and proceed to the preparation of the filling.

Peel the potatoes, wash them thoroughly, cut them into small cubes. Combine potatoes with minced meat, salt, pepper, mix thoroughly. The filling is ready!

Roll out the dough into a thin layer 2-3 mm thick, cut out circles with a glass. We put the filling in the center of each circle, lift the edges and gently pinch them with our fingers so that a small hole remains.

Transfer the balishi to a baking sheet lined with parchment, lubricate with egg white and send it to the oven, preheated to 190 degrees. Bake for 30 minutes, then take the baking sheet out of the oven, pour a teaspoon of hot broth into each hole and return the baking sheet to the oven for another 5 minutes.
