Cooking method
1. Bake cakes:
Break the eggs into a deep bowl, pour out the sugar, add honey. Beat the ingredients with a mixer, setting the bowl on a steam bath (pour water into a large saucepan, send it to the fire, bring it to a boil, set the bowl on top of it).
When the contents increase 3 times, remove the bowl from the steam bath, let the mass cool to room temperature. Then sift flour with baking powder into it, knead the dough. We wrap it in plastic wrap and send it to the refrigerator for 4 hours.
After the specified time, we take out the dough, form thin cakes from it (about 0.5 cm thick). Bake each of them in the oven, preheated to 180 degrees, for 4 minutes (the cakes are thin - they bake quickly, and in the baking process they will become thicker).
2. Preparing the cream:
We put the proteins in a deep bowl, pour sugar, a pinch of salt, send it to a water bath and beat the mass until the sugar crystals dissolve. The mass should become snow-white, keeping its shape well. We leave the proteins to cool.
Meanwhile, beat the softened butter to a fluffy state and introduce it into the protein mass in parts. We continue to beat until the cream becomes shiny, homogeneous, smooth.
3 Cake assembly and decor:
We assemble the cake by smearing the cakes with cream (the cake still has a round shape, we will change it a little later when the cakes are sufficiently soaked). We send the cake to the refrigerator for at least two hours.
We take the cooled cake out of the refrigerator, cut off the sides and form the top of the machine from them. We coat the cake with the remaining cream, carefully leveling with a culinary spatula. We cool the cake for another hour in the refrigerator to apply a second layer of cream.
And only after these procedures we proceed to the decoration of the cake with mastic. Instructions are no longer needed here - we use imagination and create beauty! I want to note that I work with mastic in advance, prepare the right colors, store them in the refrigerator in a closed container, and then just roll out and cut out the details of the right size.
