Delicious chicken okroshka on kefir
A traditional summer dish that'll satisfy your hunger even on the hottest day! For me, the taste of okroshka on kefir has been a part of summer ever since childhood. In warm weather it sometimes gets so hot you don't even want to think about hot food, yet your stomach is asking to be fed. That's exactly when this brilliantly simple recipe comes to the rescue.
It's also handy that you don't have to pour kefir over the okroshka base — you can mix it with mayonnaise or sour cream instead and get a filling yet refreshing salad.
The beauty of this recipe is the use of boiled chicken breast as the meat. It has a delicate flavor and a lovely aroma that only deepens with a bay leaf added during cooking. Okroshka like this is impossible to resist!

Cut the chicken breast into small cubes and boil it in boiling water with the bay leaf, salt, and pepper (3 minutes).

Peel the potatoes and cook them until tender (20–30 minutes). Cut the cooked potatoes into cubes. Hard-boil the eggs (10 minutes) and cool them under running water. Transfer the cooked breast and the diced potatoes to a large bowl.

Peel the boiled eggs, cut them into cubes, and add them to the bowl with the chicken breast and potatoes.

Cut the cucumbers and radishes into cubes and add them to the other ingredients.

Finely chop the green onion and dill and add them to the bowl.

In a small dish, mix the kefir, sparkling water, and vinegar.

Season the okroshka base with salt and pepper, add the ground cilantro, and mix well. Divide it among deep bowls.

Pour in the kefir mixture and stir. Serve the okroshka chilled.
