Mini Soy Flour Cupcakes

A very tasty and extremely healthy sweet treat for tea or coffee! Soy flour is a very useful product, as it contains a large amount of protein. Therefore, any baking with it will do more good than harm. It's good to cook such small cupcakes for children - they enjoy them with great pleasure!

Prepare the dough and bake:

1. Mix all dry ingredients except sugar.

2. Beat the eggs to a fluffy foam. Then add applesauce and whisk for a couple more minutes.

3. Then whisk together yogurt, vegetable oil and sugar.

4. Gently stirring, pour a thin stream of oil mixture into the egg.
Then, also mixing, in parts, pour in the dry mixture. The last part is added raisins or chopped prunes.

5. Spread out into molds and bake in a preheated 180 degree oven for 30-35 minutes.Readiness is checked with a skewer.

It is better to serve such cupcakes hot. But I will also be very tasty when cooled down!
