Layered chicken breast and cucumber salad
A tasty, filling salad for the holiday table! Chicken has a mild flavor and aroma, so it pairs well with all sorts of ingredients and turns up in plenty of salads. Add vegetables and the salad turns out light yet very satisfying. Chicken-breast salads are easy to make, which is why they suit everyday family dinners just as well as a festive spread. The ingredients here are all things you'll have on hand.
Cooking method
-
Step 1:
How do you make a salad with chicken breast and fresh cucumbers? First, boil the chicken breasts and the eggs. You can do this ahead of time so they have a chance to cool.
-
Step 2:
Finely chop the cooled chicken breast.
-
Step 3:
Put the chopped meat in a salad bowl and spread a little mayonnaise over it.
-
Step 4:
Drain the liquid from the canned corn and add the corn to the bowl. Spread a little mayonnaise over this layer too.
-
Step 5:
Wash the cucumbers and avocado. Peel the avocado and remove the pit. If the cucumbers are fresh, you can leave them unpeeled; if their skin is thick, it's better to peel them. Cut the cucumbers and avocado into small cubes.
-
Step 6:
Add the cucumber and avocado as the next layer, and spread a little mayonnaise over it as well.
-
Step 7:
For the last layer, add the chopped boiled eggs. Don't toss the salad. Spread a little mayonnaise on top and garnish with fresh parsley. The salad is ready to serve right away. Enjoy!
- The chicken breast for this salad can be boiled, baked, or fried. With fresh cucumbers it makes a very fresh, juicy salad, and you can add bolder-flavored ingredients like the corn here. You could also use smoked chicken, which gives the salad a deeper flavor and aroma. You can build it in layers — laying each one down in turn and spreading with mayonnaise — or simply toss all the ingredients together in a bowl. You can also plate it individually. Either way you'll get a very tasty, filling salad that disappears fast. For the dressing you can use sour cream instead of mayonnaise. Give it a try — it's delicious!
- It's better to make your own mayonnaise — tastier and healthier. See here for some good homemade mayonnaise recipes. You can also dress the salad with sour cream or plain yogurt instead of mayonnaise, used on their own or mixed with mayonnaise in any ratio you like, which lightens the dish.
- How do you choose good canned corn? Always check the expiration date on the can. If it's a glass jar, look closely at the kernels — they should be uniform in size and color, whole, and free of spots. The ingredient list shouldn't include dyes, preservatives, or flavor enhancers.
