Step-by-step cooking
Step 1:
To prepare a vanilla sponge cake, combine the eggs with sugar and beat at maximum mixer power for 2-5 minutes. During this time, the eggs will turn into a lush, airy mass and become white. Then gradually add the sifted flour with soda and vanilla. Gently stir with a hand whisk.
Step 2:
Pour the finished dough into a baking dish (20-22cm) and put it in the oven, preheated to 180 degrees, for 50-60 minutes. Check the readiness of the biscuit with a wooden skewer. For the first 20-30 minutes, do not open the oven, otherwise the biscuit may settle).
Step 3:
Remove the finished biscuit from the mold and cool. Then wrap it with cling film and put it in the refrigerator for a few hours so that the biscuit rests. After that, cut it into 4 cakes. Soak them in sugar syrup.
Step 4:
At this stage, you can put just sliced strawberries in the cake. But I approach it differently. I'm making strawberry stuffing. At the same time, the filling becomes heat-treated, which prolongs the shelf life of the finished cake (this is especially true in the summer). To prepare the filling, cut the strawberries into pieces.
Step 5:
Add sugar and starch to it and mix well. Put on fire and bring to a boil with constant stirring. Cool the finished strawberry filling. If you use frozen strawberries, then defrost it a little. No need to drain the juice.
Step 6:
To prepare the cream, combine the heavy cream (fat content from 33%) with powdered sugar and whisk until a fluffy stable cream. Then mix the cream curd cheese into the cream.
Step 7:
Put the cream on the sponge cake, then spread the strawberry filling, not reaching the edges 2-3 cm. Thus, layer all the cakes.
Step 8:
Assemble the cake completely and line the top and sides with a pastry spatula. Decorate the cake on the occasion of your celebration. Put the finished cake in the refrigerator for a few hours so that it freezes and gets well soaked. Have a nice tea party!
