Poltava wheat porridge
Easy to make, tasty, and wholesome! Poltava groats are made from durum wheat, usually coarse- or medium-ground. They're considered very good for the digestive tract — wheat groats improve digestion, help cleanse the body of waste and toxins, and restore fat metabolism. You can make all sorts of interesting, tasty dishes with Poltava wheat groats — with vegetables, meat, or mushrooms. The most popular recipe is fluffy wheat porridge with butter, served on its own for breakfast or as a side dish with meat, chicken, or fish at lunch.

Step 1:
Gather the ingredients for the porridge. It's important to buy a fresh, good-quality product. When choosing groats, look first at the production date, not the packaging date. The shelf life of wheat groats is usually no more than 24 months. Otherwise they may be off, tasting bitter, which will ruin both the flavor of the dish and, of course, your health.

Step 2:
Rinse the groats thoroughly, changing the water several times until it runs clear. Pick out any foreign bits you find in the groats, like pebbles and husks. Some recipes recommend toasting the groats in a dry skillet before cooking, until they turn golden. But that's optional.

Transfer the wheat groats to a heavy-bottomed pot. Pour in two cups of water. Add salt. Set it over the heat.

When the water boils, turn the heat down to its lowest setting and cook the porridge, stirring constantly, until the liquid has completely cooked away and "popping" bubbles start to form in the porridge, leaving little holes.

Pour in one more cup, this time of hot water. Stir and keep cooking the porridge until it's fully done and has reached the consistency you want.

Add a knob of butter. Turn off the heat. Cover the pot and let the porridge stand, covered, for about 20 minutes. Stir the porridge and divide it among plates. The tasty, aromatic Poltava wheat porridge is ready. You can serve this dish for breakfast — it's delicious, filling, and wholesome — or for lunch or dinner as a side with meat, fish, or chicken.
