Cooking method
Finely chop walnuts. If there are no breadcrumbs, then you can replace them with white bread, crushed into crumbs.
Softened butter is whipped to the consistency of cream, then one by one we introduce the yolks, mixing well, and granulated sugar. This mixture is brought to a homogeneous state using a blender.
Mix the breadcrumbs with baking powder and ground cinnamon. We attach this mixture with a creamy mass.
Whisk the egg whites into a thick foam. Carefully introduce them into the creamy mass, and gradually add walnuts and cognac. Carefully mix all the ingredients and put them in a baking dish, covered with oiled parchment.
We send the cake to a preheated 180 degree oven for about an hour. After the time has elapsed, we take it out and cool it at room temperature.
While the cake cools down, we prepare the syrup. In a saucepan with water, dissolve the sugar and heat it. Then add the cinnamon stick, lemon zest and bring to a boil. Boil the pan for 5 minutes until the syrup forms. Remove the cinnamon and lemon peel. Pour syrup over the cake with walnuts. Have a nice tea party!
