Oh, how I envied my classmate when she, in the 6th grade, brought a cake to class for her birthday and said: "Help yourself, I baked it myself." It was so delicious that you can't just say that. Probably because she baked herself. It was a Ginger cake. I then wrote down a lot of recipes for this cake, all different, one thing is invariable: honey, alcohol and flour with eggs, just the proportions change every time. But I prefer the one, my very first recipe. Although two years later I found a recipe for a cake called "Sunny" in the book "Delicious Food" and it was completely identical to "Ginger", I do not change my old recipe. Put butter, honey, sugar and vodka in a cup, you can use cognac and even rum, the main thing is not weaker than 40 °. We put it in a water bath until the sugar dissolves, without removing it from the heat, add the beaten eggs in advance. Stir thoroughly and pour baking powder. If it is not there, you can use soda, but you do not need to extinguish it with vinegar. As soon as it foams, we remove it from the water bath, fill in the flour and knead the dough. We divide it into several parts, it all depends on how many cakes you plan to bake. Roll out the cakes and bake for 10 minutes at a temperature of 200 ° until browning. He is therefore a "Ginger" because the cakes are dark, almost red. While they are hot, we cut out the desired shape from them on a plate or any other stencil. Whisk sugar with sour cream – this is cream, we lubricate the cakes with cream abundantly, we do not regret, the cake should be soaked. Cut off the cakes, grind, mix with cinnamon and almonds, sprinkle the cake. The cake needs to be soaked for several hours.
