Shrimp, crab stick, egg, and cheese salad

Incredibly tasty, pretty, original — perfect for a holiday table! This shrimp, crab stick, egg, and cheese salad could easily be mistaken for a cake, it looks so striking. And aside from the mayonnaise, there are only 4 ingredients in it! You can put it together in 20 minutes at most, but it should sit in the fridge to become even tastier.

Cooking method

    How do you make a shrimp and crab stick salad? First, gather your ingredients. Use large eggs; if they're small, use 4.

    Boil the shrimp in salted water, cool them, and peel them. You can use any shrimp — large or small. The net weight of the peeled shrimp should be at least 200 g, so if you have shrimp with heads and shells on, buy extra. Set a few whole shrimp aside to garnish the salad.

    Cut the rest of the shrimp into small pieces.

    Cut the crab sticks into small cubes or grate them on the coarse side of a grater.

    Hard-boil the eggs, cool them, and peel them. Separate the whites from the yolks and grate them separately into different bowls: the whites on a medium grater, the yolks on a fine one. Set a little grated yolk aside to garnish the top of the salad.

    Grate the cheese on the coarse or medium side of a grater.

    To make the salad not just tasty but really pretty, build it up in layers in a 6- to 7-inch (16 to 18 cm) ring mold. Set the ring on a serving plate and spread most of the crab sticks as the first layer. Drizzle mayonnaise on top. For convenience, I put the mayonnaise in a piping bag and snipped off the tip.

    For the next layer, spread the shrimp out evenly and drizzle with mayonnaise too.

    Spread the grated cheese over the shrimp and drizzle it with mayonnaise.

    The next layer is grated egg whites and mayonnaise.

    The second-to-last layer is grated yolks with mayonnaise.

    Scatter the rest of the crab sticks over the top of the salad. This layer shouldn't be too thick — it's there for looks more than flavor. The red-and-white top looks lovely on the table. Put the salad in the fridge for 1 hour to let the flavors meld.

    Lift off the ring mold before serving. Garnish the salad with the whole shrimp you set aside, the grated yolk, and, if you like, black caviar or an imitation of it. Or however your imagination leads you. Enjoy!

  • How do you buy crab sticks well? Always check the product's date. Surimi (minced white fish) should be first on the ingredient list. Important! Don't buy them if there's frost on them — that's a sign they've been refrozen. Fresh sticks should be free of gray and yellow spots, springy, and slightly moist. If they're sticky, they've gone bad.
  • If looks and texture don't matter to you and you're short on time, you can just cut all the ingredients into small cubes, combine them in a bowl, and dress with mayonnaise.
  • It's better to make your own mayonnaise — tastier and healthier. See some good homemade mayonnaise recipes here. You can also use sour cream or plain yogurt as the dressing instead of mayonnaise, on their own or mixed with mayonnaise in any ratio you like — this lightens the dish.
