6.Continuing to knead gradually in portions, add warm fat: butter 700 gr, pork fat 100 gr, sunflower oil 150 gr, cream 150 gr. We knead for 2 hours.
7.Add the washed dried raisins 800 gr, lemon and orange zest to the dough.
8.We put the dough in a warm place to approach.
9.When the dough is suitable, it is necessary to precipitate 1 time, to precipitate 2 times too. When the dough is suitable for 3 times, it is necessary to knock it out and leave to stand for 30 minutes.
10.Grease the molds with sunflower oil and sprinkle with semolina.
