To start, bake a cake:
Beat the yolks and add (sifted)flour, lemon zest.Separately, whisk the proteins (to peaks)and gently stirring (preferably with a wooden spoon or spatula), we introduce into the yolks. The resulting mass is poured into a mold and put on for 30 minutes.at a temperature of 180 degrees, bake in the oven (check readiness with a toothpick).After you have made sure that the cake is ready, leave it for 40 minutes in a closed oven (so that the cake does not fall off !!!), then open it for 15 minutes.and completely take it out. When the cake has cooled completely, cover with a film and put it in the refrigerator.
In the meantime, let's do the impregnation:
To do this, we need to mix lemon juice with sweetener and water. Boil 150g of berries with lemon juice and add 5g of starch.
Souffle:80gr. berries, sweetener, natural yogurt, punch with a blender.Separately soak gelatin in milk (when it swells) we put it in the microwave for 10 seconds.and add to the souffle, and separately whipped (to peaks) protein.
Now we assemble the cake:
Cut the cake into 3 even parts, impregnate and lubricate the souffle, cover the second cake on top and repeat the procedure.At the end, the collected cakes are completely smeared with souffle and decorated with berries.
In fact, you can take any berries to your taste, the name of the cake will depend on it!!!)))
