New potatoes with garlic in their jackets with a fragrant dressing

Great with meat, salad, salo, or just a hunk of fresh bread! What could be tastier than new potatoes in their jackets? Dress them with aromatic herbs, mustard, garlic, and onion and you've got a fantastic main dish!

    Scrub the new potatoes thoroughly under running water with a brush or sponge (red potatoes were used here). You can peel them if you like. Put the potatoes in a pot, cover with cold water, and set over high heat. Once it boils, salt the water, lower the heat to a minimum, and cook covered for about 20 minutes. Check for doneness with a toothpick. Drain the water.

    While the potatoes cook, make the fragrant dressing. Cut the shallot into thin half-rings, slivers, or small cubes.

    Put the shallot in a small dish and squeeze a few drops of lime or lemon over it. Stir and let it marinate for a while.

    Chop the fresh herbs as finely as you can. I used parsley and thyme. Basil, oregano, or Provençal herbs also go very well with potatoes.

    Put the garlic through a press. Put the herbs, garlic, salt, and allspice in a mortar and grind them with the pestle. Add olive oil or regular vegetable oil and mix everything until smooth.

    Add the onion, mustard, and herb dressing to the pot with the potatoes.

    Cover the pot. Holding the handles and lid (use a kitchen towel so you don't burn yourself), shake it gently, then flip the pot upside down and back upright again. This spreads the marinade and herbs as evenly as possible over the potatoes, infusing them with aroma and great flavor.
