Cooking method
1) Prepare the dough for cupcakes: combine cottage cheese with yogurt, honey or sweetener, banana (pre-grated or banana puree), mix well. Add the whipped protein and egg to the dough. Add baking powder and flour, mix thoroughly so that there are no lumps.
2) Cut the apples into small cubes, add the apples to the dough, followed by dried fruits (dried cherries, cranberries, raisins or candied pineapple are ideal), mix the dough.
3) Fill the muffin molds with dough. Do not forget that the cupcakes will rise a little, so it's better to fill the molds by 3/4. You can use any molds (I have silicone), of any size (the calorie content is calculated for cupcakes weighing 110-115 grams).
4) Bake the cupcakes in a preheated oven at 170 degrees for about 50 minutes (they should rise, turn brown). After baking, we take the cupcakes out of the molds after they cool down!
5) Preparing a light chocolate cream (you can cook it while the cupcakes are baking): melt the chocolate in a water bath or in a microwave with the addition of 2-3 tablespoons of milk, quickly mix the hot chocolate into natural yogurt, beat the cream with a whisk.
6) Dip the cooled muffins in the cream and put them in the refrigerator so that the glaze is picked up, then repeat the procedure until the cream is over. Decorate as desired and leave in the refrigerator for a couple of hours.
