The dough is prepared very simply. Sugar, honey, butter and water should be heated in a water bath until all the ingredients are dissolved. Then add the soda there, mix and remove from the water bath. Pour out the flour and knead. If the dough turned out sticky, then you need to give it an hour to infuse and then it will be ready for modeling.
Roll out the dough thinly and cut out even circles. We spread the filling on one, and cover it with the second. We seal the edges with a fork, and make a hole in the middle from above.
Because the dough is sweet, it is better to choose sour jam or jam for the filling - then the food will turn out to be contrasting and more interesting to taste.
Also, when you lay out the filling, keep in mind that the gingerbread greatly increases in size.
We spread the cooked gingerbread on a baking sheet with baking paper. And we send them to the oven, heated to 200 degrees for 15-20 minutes. If you pull out the gingerbread a little earlier, they will turn out soft, and if you hold them longer, they will be harder. It is important not to overdo it.
