Mushroom pilaf with champignons

Make your pilaf with mushrooms instead of meat! Perfect for a meatless meal, too! An appetizing take on pilaf—instead of the traditional meat, I suggest using button mushrooms. It's very tasty, easy, and aromatic, and it's just right for anyone who loves pilaf but doesn't eat meat for one reason or another.

  • How do you make mushroom pilaf with button mushrooms?
    1. Peel the vegetables, cut the carrot into cubes, and finely chop the onion. 2. Cut the mushrooms into small pieces. 3. In a cauldron (a cast-iron skillet or Dutch oven), heat the oil and fry the chopped vegetables in it for 5–7 minutes, stirring. 4. Add the mushrooms to the cauldron and fry everything together for 10 minutes. 5. Rinse the rice, add it to the cauldron, and add salt, pepper, cumin, and the unpeeled (but washed) garlic cloves. Stir everything together. 6. Add the water to the cauldron, cover, bring the pilaf-to-be to a boil, then turn the heat down to its lowest and cook for about half an hour. The mushroom pilaf is ready.   • Buy fresh, medium-sized mushrooms that are snowy white, with no spots, damage, or smell of rot. They shouldn't feel slippery. Rinse the mushrooms well to remove any dirt under a stream of warm or cold water. Cut away any bad spots if there are any. Tiny mushrooms up to 3/4 inch (2 cm) don't need to be cleaned at all—just rinse them well. With larger button mushrooms it's worth peeling off the thin skin.
