Step 1:
How to cook peasant soup? Prepare the products. It is better to take a special soup chicken, it tastes better for broth. But a regular broiler is also suitable. I was making soup with millet. Rice, pearl barley, and yak are also suitable. Just keep in mind that the cooking time of each cereal is different. Take dill or parsley from the greens.
Step 2:
Pour clean cold water into a saucepan. Put the chicken in the water, it is more convenient to cut it into pieces. Put the pan with the chicken on a small fire. Bring the water to a boil and remove the foam with a slotted spoon. Make the fire minimal. Cook the chicken for 30 minutes, soup - longer, 1.5-2 hours. Then remove the chicken and cool it down a little.
Step 3:
While the broth is cooking, prepare the other ingredients. Sort out the millet, removing garbage and red grains. Then rinse the cereal thoroughly under cold running water.
Step 4:
Cut the peeled potatoes into small pieces.
Step 5:
Put the potatoes and millet in the broth. Add salt. Bring the soup to a boil and boil it for 15 minutes.
Step 6:
Chop the greens finely.
Step 7:
Separate the meat from the bones and cut it into small pieces.
Step 8:
Put the meat in the soup, add the greens. Cook it for another 2-3 minutes. Peasant soup with cereals is ready.
This soup was often cooked by my grandmother. It turns out very satisfying and thick. When cooking the broth, I added a whole onion for flavor, at the very end I threw it away. I also put peppers and a bay leaf.
Peasant soup can be cooked without meat at all, but then it is better to put fried onions in it.
The amount of water specified in the recipe can be reduced or increased at your request, depending on whether you want to get a thick or more liquid soup.
For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
Chicken can be replaced with turkey or any other type of meat at your request. But keep in mind that in this case, the cooking time and calorie content of the dish will change.
