Step 1:
Pork tenderloin cut into medium pieces and twist in a meat grinder with onions. You can also use a blender to prepare minced meat. Add one egg to the minced meat, salt and a mixture of peppers to taste. The bread crumb (literally a couple of pieces) is soaked in milk for a couple of minutes and also added to the minced meat. Mix the contents well with your hands until smooth.
Step 2:
Hard-boiled eggs in salted water for ten minutes. We transfer them to cold water to cool down. After that, we peel them from the shell, cut them into cubes and lightly add salt so that the filling is not fresh.
Step 3:
Pour the breadcrumbs into a flat dish, mix them with paprika and Italian herbs. In another plate, in which it will be convenient to dip the cutlets, we drive in 2-3 eggs, salt them and shake them. Pour flour into the third flat plate.
Step 4:
Take the minced meat, form a tortilla, put a small amount of filling in the middle and pinch the edges tightly. After that, you can roll the cutlet a little in your hands, giving it an oblong shape. So we do it with all the minced meat.
Step 5:
Take the cutlet and dip it first in flour, then in egg and finally in breadcrumbs. So we do with all the cutlets.
Step 6:
Pour vegetable oil into the pan and heat it well over high heat, then reduce the heat. Spread the cutlets and fry on each side for 7-10 minutes. Adjust the heat so that the cutlets do not turn out to be burnt on the outside and raw on the inside.
Step 7:
We spread the fried cutlets on a paper towel so that the remaining fat is absorbed. Serve the cutlets with any side dish and fresh vegetables.
