Cooking method
Put the durian pulp on a baking sheet populated with baking paper at a distance from each other. In total, you will need 4 segments, from each you will get two "pancakes". We put the baking sheet in the freezer for at least 3-4 hours. Freeze the fruit to a solid state.
When the durian freezes, you can proceed to the dough for the batter. In a large container, sift wheat and rice flour, sift baking powder to them, pour sugar and salt. Mix all the dry ingredients in the container with a whisk.
Pour the milk into a separate bowl, to which we add the melted, but cooled butter, as well as vanilla extract. Here we also add the egg yolk and whisk everything together with a whisk until smooth.
In another bowl, whisk the egg white. We do this with a mixer until "soft peaks". This is when the foam becomes snow-white, but still remains wet. If you lift the mixer, the peaks already remain, but slowly settle (unlike solid peaks).
Combine the flour and milk mixture together, mix until smooth. We introduce the whipped whites into the dough, mix gently. The dough is ready! Now you can proceed to the frying process.
Pour rapeseed oil into a saucepan with a thick bottom (you can put it in a cast iron) and put it on medium heat. Heat the oil well - it should boil. By the way, if there is no rapeseed oil, you can use sunflower oil.
Remove the durian from the freezer and roll each piece in flour (40 g), poured on a flat plate. Then we dip each piece of fruit into the dough, after which we spread it in oil and fry it until a beautiful golden color.
Ready fried durian in batter spread on a layer of paper towels to absorb excess oil. After laying out the finished durian on serving plates, pour honey, sprinkle with powdered sugar and serve with a ball of ice cream on the table.
