Step 1:
How to freeze cutlets? Prepare the products. You can freeze cutlets made from any kind of meat. You can make minced meat yourself or use a ready-made purchased one. Prepare a minced meat cutlet mass according to a recipe suitable for you. I usually add chopped onion, a bun soaked in milk, salt and pepper.
Step 2:
If you plan to store frozen cutlets for several months, your freezer should produce a temperature of -18 degrees or lower. First, form the cutlets. The freezing and cooking time depends on the size and shape. So don't make the cutlets too big. Pour the breadcrumbs into a flat plate, in which it will be convenient to bread the cutlets.
Step 3:
Carefully pan the cutlets from all sides and place them at a distance from each other on a cutting board or a flat dish covered with parchment, cling film or a bag. Breadcrumbs can be replaced with wheat or corn flour. I like breadcrumbs more. Cutlets with them turn out juicier.
Step 4:
To prevent the cutlets from weathering and absorbing odors, cover them with a bag or food wrap. Put the board with cutlets in the freezer on the shelf for freezing and turn on the freezing mode or the lowest temperature. With a gradual decrease in temperature, ice may form inside the blanks, which will worsen their taste after defrosting. I put -23 degrees. And after the cutlets are frozen, I set -18.
Step 5:
When a lot of cutlets are being prepared, use boards in combination with containers for freezing.
Step 6:
They can be put in several tiers and save space in the freezer. After an hour, take out the blanks and turn the cutlets to the other side. After another 2 hours, take out the cutlets and pack them in bags or storage containers.
Step 7:
To prepare lightly fried cutlets for freezing, fry them on high heat on both sides, remove excess fat, put on paper towels and be sure to cool completely. Lightly fried and ready-made cutlets freeze similarly to raw cutlets.
Step 8:
Glue or enclose a note in the package, which indicates what is frozen and when (write with a pencil, as the ink from the pen may leak). So you will surely know the shelf life and easily find what you need in a full freezer.
The method of cooking cutlets depends on which cutlets you have frozen – raw or ready. If they are made from raw minced meat or lightly fried, then cook them in a frying pan, in the oven or in a steamer. The cooking time will be slightly longer than for fresh cutlets. If you have frozen ready-made cutlets, then in addition to the described cooking methods, they can be defrosted in the microwave. It is also delicious to bake such cutlets in the oven or stew in sauce.
