Cooking method
Raspberries can be crushed not only with the help of a pusher. You can also use a blender or a food processor. If a combine harvester is used, it cannot be crushed continuously, but in short pulses. This recipe does not involve making mashed berries, but only roughly chop them. Raspberries need to be sorted out before cooking, green or spoiled berries should not be present in it.
1. My raspberries, we throw them into a colander, let the liquid drain.
2. Then we release the berries from the stalks. We put it in a bowl.
3. With the help of a mashed potato masher, we crush raspberries. It does not need to be turned into a homogeneous puree, only slightly suppressed.
4. And now we pour sugar to the berries, mix with a wooden spatula. Leave for 10 minutes. During this time, mix a couple of times.
5. Pour pectin into a saucepan, fill with the specified amount of water. Mix thoroughly.
6. We send the saucepan to the fire, bring the liquid to a boil, stirring constantly. Boil for 1 minute. Then remove from the heat.
7. pour the pectin mixture to the berries, mix. Stir for about 3-4 minutes until the sugar is completely dissolved.
8. And now we lay out the berry mass in pre-prepared jars. It can also be plastic containers. It is not necessary to fill the containers up to the rim, a little space should remain.
9. Cover the containers with lids. Leave at room temperature for a day.
If the berry puree is supposed to be used immediately, then after a day we send the containers to the refrigerator. The berries will be stored in the refrigerator for up to 3 weeks. For longer storage, you need to place containers with raspberries in the freezer. In frozen form, such berry puree will be stored for up to one year. If necessary, we simply take out a jar of raspberries from the freezer and send it to the refrigerator overnight (8-10 hours). During this time, raspberries will thaw and it can be consumed. It is very convenient, you can enjoy vitamin sweetness at any time of the year!
