Napa Cabbage Salad with Ham and Cucumber
A simple, quick, light, and tasty bite you can throw together in minutes! This salad of napa cabbage, ham, and cucumber is great for any occasion — a family celebration or just a regular weeknight dinner. Easy to make from everyday ingredients, with a nicely balanced flavor.

Step 1:
How do you make a salad with napa cabbage, ham, and cucumber? Gather your ingredients. Use a small head of napa cabbage — you'll only need about a third of it for the salad. Choose a good-quality ham from a brand you trust. And finally, the cucumbers. Any time of year, I recommend small bumpy-skinned cucumbers — they're the most flavorful.

Step 2:
Rinse the cabbage well and peel off and discard the top 1–2 leaves, where most of the dirt collects. Cut the cabbage into thin strips. If you don't have napa cabbage, you can swap in any leaf lettuce or small-headed greens — or use regular green cabbage, ideally a young one.

Step 3:
Wash the cucumbers well, then pat them dry. Trim the ends and cut the cucumbers into small cubes. Be sure to taste a piece first — a bitter cucumber will ruin the salad.

Step 4:
Cut the ham into small cubes. You can substitute boiled or smoked deli sausage, or boiled or roasted chicken or other meat.

Hard-boil the eggs. Cool, peel, and cut them into small cubes.

Toss all the chopped ingredients together and season with salt to taste — keep in mind the ham is fairly salty and mayonnaise adds salt too. I recommend homemade mayonnaise. You can also use sour cream of any fat content, or dress the salad with a plain unsweetened yogurt such as Greek.

Serve the salad in a large bowl or in individual dishes. Enjoy!
- How do you hard-boil eggs? To keep them from cracking, start them in cold water over low heat. Boil for 9 minutes after the water comes to a boil, then transfer to cold water to cool. The sudden temperature change makes them easier to peel.
- The salad looks neat and attractive when all the ingredients are cut into pieces of the same size and shape (cubes, for example).
