Honey-Roasted Potatoes

A wonderful side for meat dishes — and plenty more. I've loved vegetables braised or baked in honey since I was a kid. The other day I spotted little potatoes roasted in honey with paprika and herbs at a supermarket, and I wanted to make something like it myself so badly that I dug up an old recipe I used to use for honey potatoes. If you've never tried anything like this, give it a go — I think you'll love it.

Cooking method

    Scrub the potatoes well, place them in a pot, and add the thyme, allspice, bay leaf, and salt. Cover with water and boil until they're about halfway cooked.

    Then drain the water, let the potatoes cool, and peel them.

    Arrange the potatoes in a baking dish.

    Drizzle with the vegetable oil and honey and toss gently to coat. Roast the potatoes in an oven preheated to 400°F (200°C) for about 25 minutes, until golden. Stir them a few times as they bake. Grind the dried rosemary, peppercorns, and sea salt in a spice mill. Five minutes before they're done, sprinkle the potatoes with the ground spices.

  • Keep in mind that every oven is different, so the temperature and cooking time may vary from what's in the recipe. For any baked dish to turn out well, it helps to know your oven's quirks!
  • If you use a pre-made spice blend, always check the label. Many blends already contain salt, so account for that or you risk over-salting the dish.
  • Root vegetables are best scrubbed with a brush or stiff sponge under running water.
