Step 1:
How to cook valui for the winter? We process each mushroom correctly, thoroughly clean it, rinse it well and soak it for several hours in cold water, which we periodically drain and change.
Step 2:
Put the mushrooms properly prepared for hot salting in a saucepan, pour one liter of water into it and pour one tablespoon of salt.
Step 3:
Close the pot with a lid and put it on the stove, turn it on high heat, bring the mushrooms to a boil, in the process gently mix with a slotted spoon and cook for five minutes.
Step 4:
We put the boiled mushrooms in a colander and rinse them well with running water.
Step 5:
We weigh the boiled mushrooms on the scales to calculate the required amount of salt for salting, which will take fifty grams per kilogram of mushrooms.
Step 6:
We put the suspended mushrooms in a saucepan, into which one liter of water was poured before, put it on the stove and bring it to a boil, after which we cook them again for five minutes.
Step 7:
We put sprigs of dry dill, garlic cloves, bay leaf, fragrant black pepper and a pinch of salt on the bottom of each sterilized jar.
Step 8:
The cooled mushrooms are laid out tightly in sterilized jars, alternating between dill, garlic cloves, bay leaf, fragrant black pepper and salt to taste.
Step 9:
We put the mushrooms in jars, slightly pressing so that the juice stands out and closes them.
Step 10:
Cooked mushrooms in jars are closed only with plastic or glass lids, in order to avoid the ingress of microorganisms.

The taste qualities and beneficial properties of these mushrooms are mainly known to mushroom pickers with experience, but novice mushroom pickers try to avoid picking boulders because of the bitter taste of the pulp.
