Step 1:
Prepare the spices and herbs necessary for the preparation of pickles. We cut off the tails, and then thoroughly wash the cucumbers, which were previously soaked for six hours in water.
Step 2:
We put twigs with currant leaves on the bottom of the pan, add dry dill, horseradish leaf, garlic head, half of chopped hot red pepper, a bunch of fresh dill and spread cucumbers.
Step 3:
Not very finely chop half of the hot red pepper.
Step 4:
Cover cucumbers on top with a layer of currant leaves, horseradish, add dill and garlic with hot red pepper.
Step 5:
Cucumbers are filled with boiled cold water, about five liters and add salt for salting, at the rate of one liter of water, fifty grams of salt, cover the top with gauze, a plate and pressing down with a load, leave for three days for the natural fermentation process and lactic acid production.
Step 6:
After three days, we put the cucumbers out of the pan, filter the brine through a colander into a smaller pan and remove all the used greens.
Step 7:
Put the marinade pan on the stove to bring to a boil and rinse each cucumber with cold water.
Step 8:
Cut a little hot red pepper, a few cloves of garlic and put them in jars, add black pepper peas, bay leaf and a few umbrellas of dill.
Step 9:
Pour boiling water for two minutes on the leaves of currant, oak, cherry, horseradish, which will give a special taste to cucumbers.
Step 10:
We put cucumbers in each jar quite tightly, adding a bunch of dried dill.
Step 11:
Very carefully pour the boiled brine into the jars, then cover the jars with a lid and set aside to cool for ten minutes.
Step 12:
Drain the brine from the cooled cans into a saucepan and put it on a large fire to boil.
Step 13:
Very carefully fill the jars with cucumbers with boiled brine, close tightly with lids and turning the jars over, check them for tightness, then close with a blanket and leave in this form for a day.
