Step 1:

Prepare the fish first. Rinse it with running cold water. Dip with a paper towel from excess moisture. If the sprat is large, you can remove the head and insides. It is not necessary to clean a small fish.

Pick up a convenient dish for salting. Move the prepared sprat. Add salt. Stir so that all the carcasses are covered with salt. Leave it on the kitchen table for 5-6 hours. If the fish is small, this time will be enough. When using a large sprat, the salting time should be increased to 7-9 hours. Stir from time to time.
Step 4:
Prepare the spicy mixture for pickling. In a deep bowl, add vegetable oil, curry, ground paprika, turmeric. Mix it up. You should get a thickish mass, similar to sauce. The composition of spices and their quantity can be adjusted to your liking. Paprika and turmeric will give a beautiful yellow-orange hue.
Step 5:
When the salting time is up, taste the sprat. If everything is fine, transfer to a colander and rinse well from salt. Dip with napkins from excess liquid. Transfer to a deep bowl. Add the spicy mixture. Mix it up. Put it in the refrigerator for 1-2 hours.
Step 6:
Put the fish in one layer. In this case, it turned out 3 pallets. Turn on the electric dryer to the minimum temperature (40-50 degrees). Dry until desired result. After an hour, swap the pallets, as the lower pallet dries faster compared to the upper one. In this case, it took 2 hours to dry the sprat at a power of 520 watts.
