Silver carp balyk is the most delicious dish made from this fish. It is not inferior in taste to analogues made from trout, salmon and other expensive fish. To prepare a silver carp balyk, you will need a minimum of time and ingredients. This recipe was found by me in a cookbook in which recipes from fish were given. Let's start analyzing all the nuances.
Wash the fish, cut off the tail and head, cut along the back on both sides (closer to the spine), remove the spine, take out the insides and throw them away. Rinse the remaining part well with cold water. Cut across in pieces of 8-10 cm . Rub all the pieces with coarse non-iodized salt, put them in layers in a bowl. Each layer should be sprinkled with salt and put in the refrigerator to be salted for 5 days. After this time, drain the brine, rinse each piece in cold water and soak in water for 5 hours, changing the water periodically. Next, hang out to dry in the shade, under a fan or in the wind. After 2 or 3 days, the fish balyk will be ready. Wrap each piece in a film and put it in the refrigerator. The food will be tender and delicious!
