Step-by-step cooking
Step 1:
For cooking, you will need a ready-made salted herring. You can buy it, or you can salt the fish yourself. To do this, defrost the herring, rinse and pour brine. The brine is prepared as follows. Bring a liter of water to a boil, pour 250 grams of salt, 3 tablespoons of sugar. Add the bay leaf. Boil for 5 minutes. Then let it cool down. And only then, we pour the fish with the cooled brine. And we leave it in brine for 3-4 days in the refrigerator
Step 2:
We cut off the herring's head. With scissors, we cut off the fins. Carefully cut the abdomen and take out all the insides. Be sure to remove the black film. It gives the fish a bitter taste.
Step 3:
Then with a sharp knife we make an incision along the back. Remove the skin from the fish. We take out the spine and large bones. If desired, we also remove small bones. For convenience, you can use tweezers.
Step 4:
Then cut the fish into portions. You can also marinate fish in larger pieces.
Step 5:
Peel the onion and cut into half rings. For cooking, you can use white or red onions. Put the fish in the container, then the onion. We dilute vinegar 9% in a ratio of 1:3 with water and pour marinade over the fish. You can add some spices. We close the container with a lid and put it in the refrigerator for 5-6 hours. After this time, we remove the fish from the marinade. You can pour it with sunflower oil and sprinkle with chopped herbs. We serve it to the table.

Some tips.
Before you start working with fish, you can wrap the cutting board with cling film. So the board will not absorb a stable fishy smell and it will be much easier to wash it.
Along with onions, you can add carrots cut into thin strips to the herring.
It is recommended to take table vinegar, not essence! Ordinary vinegar can be replaced with grape or apple vinegar. But keep in mind that the latter has a slightly specific flavor.
In order to make the taste of fish more original, you can add a pod of hot pepper, a little sweet pepper-peas and mustard seeds.
