    Wash and dry the green onion feathers. Cut the green onions into rings. You can cut together with the white lower part of the feather or only the green stems. If you do not like the too sharp taste of onions and garlic, you can replace them with green cherries - it has a similar taste of onions and garlic, but milder.

    Chop the dill, parsley and cilantro finely. A set of greens can be selected, supplemented or replaced to your liking. You can add more mint, spinach, wild cherry, etc.

    Peel the garlic cloves and finely chop or pass through a press. If you do not like the strong taste of garlic in the soup, you can reduce its amount or not add it at all.

Also, the fat content of the kefir itself affects the density of the soup. The higher the fat content, the thicker the kefir itself and, accordingly, the soup as a whole.

Instead of kefir, you can take drinking natural yogurt without additives. It will turn out delicious with matzoni, but then the soup needs to be additionally diluted with drinking water.
