Tapioca tea is a refreshing Taiwanese drink, which, perhaps, has received the greatest fame all over the world. Although this is a fairly young drink. Like any traditional dish, tea has many variations of preparation. For example, it can be prepared from any tea, milk can be added, or it can be excluded from the composition, sweetener can be put or not put. And also, if desired, use various additives, for example, fruits.

So, let's start cooking. To do this, tapioca pearls must be pre-soaked in accordance with the instructions on the package. Usually it is about eight hours, for example, you can soak overnight. During this time, the pearls will soften and become more voluminous, they will look like chewing marmalade. Drain the water from the tapioca container.

Now we brew black tea, focusing on the strength to your taste. In the meantime, the tea is hot, add sugar (or any other sweetener) to it and mix until the crystals completely dissolve. We are waiting for the tea to cool completely and put it in the refrigerator for 2 hours to cool down.

When time passes, we place the pearls on the bottom of two glasses, distributing evenly. We fill the shaker with ice, pour milk and chilled tea into it. Shake vigorously. After that, we filter the liquid into glasses. We do not reuse ice from the shaker - we add fresh ice cubes to the glasses with tea. Eo is important, since the ice in the shaker will break when shaken and as a result small crystals will get into the tea.

We serve tea to the table with a straw.
